Sweet Potato Cake - cooking recipe

Ingredients

3 c. flour
2 c. sugar
2 tsp. baking powder
1 tsp. soda
2 tsp. cinnamon
1/4 tsp. salt
1 c. chopped pecans
1 c. cooking oil
2 tsp. vanilla
3 eggs
2 c. grated raw sweet potatoes
1 (1 lb.) can crushed pineapple with juice

Preparation

Sift dry ingredients and place in mixing bowl.
Add cooking oil, vanilla and can of pineapple.
Mix well.
Add eggs, mixing well after each addition.
Add grated sweet potatoes and pecans. Stir well.
Pour in tube pan.
Bake at 350\u00b0 for about 1 1/4 hours. Test with toothpick.
