Monterey Beans And Cheese - cooking recipe

Ingredients
    1/2 medium onion, sliced
    1/2 green pepper, diced
    2 c. cooked kidney beans
    2 ripe tomatoes
    3/4 c. tomato sauce
    1 tsp. chili powder (optional)
    salt and pepper to taste
Preparation
    Fry the first 3 ingredients. Add the remaining ingredients. Cook, slowly, stirring until blended, about 5 minutes. Sprinkle 1/4 to 1/2 pound Cheddar cheese on top.
    Put lid on for 2 minutes or until cheese is melted. Serve on top of rice or mix with rice. Serve with carrots.
