Italian Squash Pie(Low-Fat) - cooking recipe

Ingredients
    4 c. thinly sliced yellow squash
    1/2 c. chopped onion
    1/2 c. chopped bell pepper
    1/2 c. chopped celery
    1/2 c. fresh parsley, chopped or 2 Tbsp. dry parsley
    1/2 tsp. salt
    1/2 tsp. pepper
    1 Pet ready pie crust
    1/4 tsp. oregano
    2 c. shredded Mozzarella cheese
    1 c. shredded sharp Cheddar cheese
    1/2 c. shredded carrots
    3 eggs substitute
    1 Tbsp. Mrs. Dash original seasoning
    1 Tbsp. prepared mustard
Preparation
    Cook vegetables in microwave or skillet sprayed with vegetable spray until tender.
    Add cheese to egg substitute.
    Add seasonings; mix well.
    Place pie crust in glass pie plate; spread mustard on bottom of crust.
    Add vegetables.
    Pour cheese and egg mixture over top.
    Bake at 375\u00b0 for 18 to 20 minutes or until knife inserted in center comes out clean.
