Oatmeal-Raisin Muffins - cooking recipe

Ingredients
    1 c. sifted all-purpose flour
    3 tsp. baking powder
    1/4 c. shortening
    1 c. quick cooking rolled oats
    1 egg (or 2 egg whites)
    1 c. milk
    1/2 c. brown sugar
    1/2 c. raisins
    1/4 c. granulated sugar
    1/4 tsp. ground cinnamon
    1/2 tsp. salt
Preparation
    Sift together flour, baking powder and salt.
    Cut in shortening until mixture is like coarse crumbs.
    Stir in rolled oats.
    Combine egg, milk and brown sugar; beat well.
    Stir into dry ingredients; add raisins.
    Spoon into paper baking cups in muffin pans.
    Combine granulated sugar and cinnamon; sprinkle over batter.
    Bake in a 425\u00b0 oven for 15 to 20 minutes.
    Makes 12 muffins.
