Salmon Cutlets - cooking recipe

Ingredients
    1 large can salmon
    2 c. mashed potatoes
    1 egg, slightly beaten
    1 1/2 tsp. salt
    1/4 tsp. pepper
    fine, sifted bread crumbs
Preparation
    Remove bones and skin from salmon; mash with fork.
    Add potatoes, salt, pepper and beaten egg.
    Mix well.
    Form into cutlets.
    Roll in crumbs.
    Heat oil and fry.
    Drain on absorbent paper.
