Poached Catfish - cooking recipe

Ingredients
    1 catfish fillet (5 to 7 ounces)
    1 Tbsp. melted butter or margarine
    1 Tbsp. dry white wine
    1/2 tsp. lemon juice
    1/2 tsp. dried thyme leaves
    1/2 tsp. dried tarragon leaves
    1/2 tsp. paprika
    salt
    ground white pepper
    parsley sprigs (optional)
    lemon wedge (optional)
Preparation
    In medium sized microwave-safe dish, place fish.
    In cup, combine butter, wine, lemon juice, thyme, tarragon, paprika and salt and pepper to taste.
    Cover and microwave on High (100% power) 2 1/2 minutes or until fish flakes when tested with fork.
    Rotate dish one-quarter turn halfway through cooking time.
    To serve, garnish with parsley and lemon.
