Confetti Rice - cooking recipe
Ingredients

1/4 c. butter
3/4 c. uncooked rice
1 1/2 c. hot chicken broth
2 Tbsp. grated carrots
2 Tbsp. thinly sliced celery
2 Tbsp. sliced green onions
1 Tbsp. parsley flakes
1 Tbsp. sliced toasted almonds (optional)
Preparation

Melt butter in a skillet.
Add rice, toss to coat with butter. Heat on low for 5 minutes, stirring occasionally.
Place rice mixture in a 2-quart casserole bowl; add hot chicken broth.
Cover and bake at 350\u00b0 for 30 minutes.
Stir in the remaining ingredients.
Cook 5 additional minutes.
Serves 4.
