Cavsa From Peru - cooking recipe

Ingredients
    8 medium potatoes
    3 Tbsp. lemon juice
    1/2 c. vegetable oil
    1 onion, chopped
    2 sliced tomatoes
    1 Tbsp. ground hot pepper
Preparation
    Boil potatoes and mash well.
    Add lemon juice, oil, salt and hot pepper.
    Place a layer of mixture in bottom of serving dish. Saute onion and spread over potato mixture.
    May add other cooked, chopped fine vegetables.
    Cover with second layer of potatoes. Sprinkle with grated cheese (optional).
    Garnish with olives, sliced hard-boiled eggs and serve on lettuce.
