Cream Of Potato Soup(Heart Smart) - cooking recipe

Ingredients
    2 Tbsp. margarine
    1/2 c. chopped onions
    1/4 c. chopped celery
    1 1/2 c. diced, peeled potatoes (1 large)
    1 c. low sodium chicken broth
    1/4 c. chopped fresh parsley
    1/4 tsp. thyme, crushed
    1/4 tsp. celery seed
    1/4 tsp. salt
    1/8 tsp. pepper
    1 1/2 c. skim milk
Preparation
    In medium saucepan over medium to high heat, melt margarine. Add onion and celery.
    Cook about 4 minutes or until soft, stirring frequently.
    Add potatoes, chicken broth, parsley, thyme, celery seed, salt and pepper.
    Bring to a boil.
    Reduce heat and cover.
    Simmer about 15 minutes or until potatoes are almost tender.
    Add milk.
    Simmer, uncovered, 5 minutes, stirring occasionally.
    In blender at medium speed, blend about 1/4 of the mixture at a time until smooth.
    Return to saucepan, heat about 1 minute.
    Makes 4 servings, about 1 cup each.
