Apple Butter - cooking recipe

Ingredients
5 lb. apples (preferably different kinds)
    2 c. apple cider
    2 c. dark brown sugar
    1 tsp. ground cinnamon
    1/2 tsp. nutmeg
Preparation
Cut apples into chunks, but do not peel.
In a glass or stainless steel kettle, combine apples and cider.
Cover and cook over medium-high heat until apples are very soft, about 30 minutes. Press through a food mill or fine sieve and return to the cleaned pot.
Stir in sugar, cinnamon and nutmeg.
Simmer over low heat, stirring occasionally, until very thick, about 2 hours.
Cool to room temperature, then refrigerate or freeze.
