Lo-Fat Muffins - cooking recipe

Ingredients
    4 c. grated carrots (spooned, not packed, into cups)
    2 c. sugar or 3 or 4 pkg. artificial sweetener or part of each
    1 can crushed pineapple, drained
    1 c. prune puree (recipe follows)
    4 large egg whites
    2 tsp. vanilla
    2 c. flour
    2 tsp. baking soda
    2 tsp. cinnamon
    1/2 tsp. salt
    3/4 c. raisins (optional)
Preparation
    Preheat oven to 375\u00b0.
    Coat 18 (2 3/4-inch) muffin tin cups with vegetable cooking spray; set aside.
