Peanut Butter And Banana Cookies(Diabetic) - cooking recipe

Ingredients
    1/4 c. butter or margarine
    1/2 c. mashed ripe banana (about 2 medium bananas)
    1/2 c. no-sugar-added natural peanut butter
    1 egg
    1/4 c. thawed frozen unsweetened apple juice concentrate
    1 tsp. vanilla
    1 c. all-purpose flour
    1/2 tsp. baking soda
    1/4 tsp. salt
    1/2 c. chopped salted peanuts
    whole peanuts (optional)
Preparation
    Preheat oven to 375\u00b0.
    Beat butter in large bowl until creamy. Add banana and peanut butter; beat until smooth.
    Blend in egg, apple juice concentrate and vanilla.
    Beat in flour, baking soda and salt.
    Stir in chopped peanuts.
    Drop rounded tablespoonfuls of dough, 2 inches apart, onto lightly greased cookie sheets.
    Top each with one peanut, if desired.
    Bake for 8 minutes, or until set.
    Cool completely on wire rack.
    Store in tightly covered container.
    Makes 2 dozen.
