Stuffed Baked Potatoes - cooking recipe

Ingredients
    4 to 6 large baking potatoes
    1 lb. ground chuck
    1 lb. Velveeta cheese, cubed
    1 can Ro-Tel tomatoes with green chilies, diced
    1 pkg. taco seasoning mix
    1/2 to 1 c. green onions, finely chopped
    8 oz. sour cream
    salt and pepper
Preparation
    Grease potatoes and bake for 1 1/2 hours at 350\u00b0 or until done.
    Brown hamburger meat and mix with taco seasoning mix according to package directions.
    (Be sure meat is drained.)
    In a double boiler or microwave, melt Velveeta cheese mixed with Ro-Tel tomatoes.
    Stir frequently.
    To serve, slice hot potato and lightly fluff.
    Layer taco meat, cheese mixture, sour cream, green onions and salt and pepper to taste.
    Yield:
    4 to 6 servings.
