Banana Coffee Bread - cooking recipe
Ingredients

1/2 c. shortening
1 c. sugar
2 eggs
3/4 c. mashed banana
1 1/4 c. flour
3/4 tsp. soda
1/2 tsp. salt
1 1/2 c. raw (unprocessed) bran
1 1/4 c. whole wheat pastry flour
1 1/2 tsp. baking soda
3/4 tsp. light salt
2 1/2 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. nutmeg
1/2 c. raisins
1/3 c. brown sugar
1/4 c. dark molasses
3 Tbsp. oil
1 egg
1 c. nonfat milk
Preparation

Preheat oven to 400\u00b0.
Combine bran, flour, baking soda, light salt, cinnamon, nutmeg and raisins in a bowl.
Mix thoroughly. Beat brown sugar, molasses, oil, egg and milk in a bowl.
Add wet ingredients to dry and stir until ingredients are moist.
Fill muffin tins 2/3 full of batter.
Bake for 15 to 18 minutes. Servings equal 1 starch and 1/2 fat.
