Grilled Salmon Fillets(Easy; See Marinade Variations) - cooking recipe

Ingredients
    2 Tbsp. vegetable oil (plus extra for grill grate)
    2 Tbsp. grated fresh ginger
    1 1/2 tsp. ground cumin
    1 1/2 tsp. ground coriander
    1 1/2 tsp. salt
    1/4 tsp. cayenne pepper
    4 center-cut salmon fillets (each about 6 oz. and 1 1/2-inches thick), pin bones removed
    Mango Chutney (recipe follows)
Preparation
    Make a marinade by mixing 2 tablespoons oil, ginger, cumin, coriander, salt and cayenne together in large shallow bowl. Add fish and marinate in the refrigerator for no more than 30 minutes. Meanwhile, build a single-level fire. Set grill rack in place. Cover grill with lid and
    let rack heat up, about 5 minutes. Rub cooking grate with oil-dipped wad of paper towels.
