Potatoes And Tomatoes With Fresh Coconut - cooking recipe

Ingredients
    5 medium-sized potatoes (about 1 1/4 lb.)
    4 Tbsp. vegetable oil
    6 cloves garlic, peeled and finely chopped
    1 whole dried hot red pepper
    1 tsp. whole cumin
    2 tsp. ground cumin
    5 oz. grated coconut
    1/2 tsp. ground turmeric
    1 1/4 lb. fresh tomatoes, peeled and diced into 1/2-inch pieces or 16 to 20 oz. tin Italian tomatoes
    2 tsp. salt and sugar
    1 tsp. red wine vinegar
Preparation
    Peel potatoes, then dice into 3/4-inch pieces and put into bowl of cold water.
    Heat oil in heavy 3-quart pot over medium-high flame.
    When hot, add finely chopped garlic.
    Stir about 5 seconds before adding red pepper and cumin seed.
    Stir for another 3 seconds.
    Garlic should brown lightly, red pepper should darken and cumin seed should sizzle.
    Lower heat to medium.
    Add grated coconut and stir for 10 to 15 seconds.
