Chicken Saltimbocca - cooking recipe
Ingredients

1 1/2 to 2 lb. chicken cutlets, sliced thin
1 lb. Mozzarella cheese
1/2 lb. deli ham, sliced
3 to 4 Tbsp. butter
flour, salt and pepper mixture (to coat cutlets)
1/2 c. white wine
1/4 c. tomato sauce
2 c. chicken broth
2 Tbsp. lemon juice
Preparation

Coat cutlets with mixture of flour, salt and pepper.
Brown in butter and remove as cooked.
Sprinkle 3 tablespoons flour into pan drippings.
(You may have to add more butter to drippings.) Stir in wine, tomato sauce, chicken broth, lemon juice and salt and pepper to taste.
Cook over low heat until sauce thickens.
