Marinated Artichokes - cooking recipe

Ingredients
    3 cans artichokes, rinsed and quartered
    3 cans anchovy filets, chopped (not the oil)
    3 bunches green onions, chopped fine
    small amount parsley, chopped
    1 pt. olive oil or enough to cover ingredients
    garlic (if desired)
Preparation
    Mix all ingredients and allow to marinate for at least 2 hours.
    Serve with crackers.
    (Better if made 1 or 2 days ahead.)
