Mashed Potato Candy - cooking recipe

Ingredients
    1/4 c. cold mashed potato (1 potato)
    2 lb. confectioners sugar
    1 tsp. vanilla
Preparation
    Add sugar and vanilla to cold potato.
    Roll with rolling pin dusted with flour.
    Spread with peanut butter.
    Roll up like a pinwheel; place in refrigerator.
    Cut into slices.
    May be frozen. Wrap in wax paper or plastic wrap so it doesn't dry out.
