Eggplant Casserole - cooking recipe

eggplant
slices of Mozzarella cheese
Ragu spaghetti sauce
Preparation

Wash eggplant and cut into 1-inch slices.
Sprinkle with salt and allow to sit for 1/2 to 1 hour in colander.
Squeeze water out of slices and pat dry with toweling.
Dip slices in seasoned flour and brown in frying pan.
Place in greased 9-inch square baking dish.
Top each piece with a slice of Mozzarella cheese.
Place a second slice of eggplant on cheese.
Pour Ragu spaghetti sauce over the top.
Bake at 350\u00b0 for 45 to 60 minutes, covered for first 30 minutes.
