Black-Eyed Bean Salad - cooking recipe
Ingredients

3 medium red peppers
1 small red onion
4 (15 to 19 oz.) can black-eyed beans
2 (10 oz.) pkg. frozen peas, thawed
1/3 c. cider vinegar
1/4 c. oil
2 tsp. sugar
2 tsp. fresh thyme (1/2 tsp. dry)
1 1/2 tsp. salt
1 1/2 tsp. black pepper
2 large tomatoes
Preparation

Dice peppers, chop onion and rinse beans; toss all ingredients.
Cover and refrigerate.
