Quick Applesauce Muffins - cooking recipe

Ingredients
    2 c. buttermilk baking mix
    1/2 c. raisins
    1 egg
    2 tsp. cinnamon
    1 c. chunk-style applesauce
    1/3 c. packed dark brown sugar
    2 Tbsp. cinnamon-sugar
Preparation
    Line 6 custard cups or microwave muffin cups with 2 paper liners.
    In medium bowl, mix all ingredients except cinnamon-sugar.
    Fill cups half full.
    Sprinkle with cinnamon-sugar.
    Arrange muffins in a ring in oven.
    Microwave on High for 2 1/2 to 5 1/2 minutes or until tops spring back when touched, rearranging after half the time.
    Remove muffins from cups to a wire rack.
    Moist spots will dry during cooling.
    Repeat with remaining muffins.
