Green Beans With Red Pepper And Shallots - cooking recipe

Ingredients
    2 lb. fresh green beans
    3 large shallots, chopped
    1 large red bell pepper, julienned
    1/3 c. butter
    1 tsp. kosher salt
    pepper to taste
Preparation
    Blanch green beans in boiling water for 3 to 4 minutes. Plunk into ice water to prevent continued cooking.
    Drain.
    Saute shallots and bell pepper in butter for 3 to 5 minutes or until tender.
    Stir in green beans, salt and pepper.
    Cook just until heated.
    Serve immediately.
