Cocky Leeky Soup - cooking recipe
Ingredients

5 lb. stewing chicken, disjointed
2 1/2 qt. water
2 tsp. salt
1/2 tsp. pepper
12 fresh leeks or 18 scallions, sliced
1 1/2 c. rice, half cooked
Preparation

Wash chicken carefully.
Place in a saucepan with water and cook 2 hours or until tender.
Add salt and pepper at end of first hour.
Remove chicken and keep warm.
Add leeks and rice to soup and cook 25 minutes.
Remove chicken from bones and add to soup. Cook 5 minutes more and serve.
