Apple Cake(Low Cholesterol - Low-Fat) - cooking recipe

Ingredients
    2 c. diced apples
    2/3 c. sugar
    1/3 c. vegetable oil
    1 tsp. vanilla
    2 egg whites, beaten
    1 1/2 c. unsifted flour
    1 tsp. baking powder
    1/2 tsp. baking soda
    1 tsp. cinnamon
    1/4 tsp. salt
    1/2 c. raisins
    1/2 c. finely grated lemon rind
Preparation
    Preheat oven to 350\u00b0.
    Combine apples and sugar in a mixing bowl.
    Blend oil, vanilla and egg whites with apples and sugar. Combine the dry ingredients and mix in well.
    Stir in raisins and lemon rind.
    Pour into 8-inch square cake pan.
    Bake 35 to 40 minutes in a lightly greased pan until toothpick comes out dry.
