"Arni Psito" - Roast Leg Of Lamb - cooking recipe

Ingredients
    1 (8 to 10 lb.) fresh leg of lamb
    1/2 lemon
    3 1/2 tsp. salt
    1/2 tsp. black pepper
    1/2 tsp. dried oregano
    2 Tbsp. onion, chopped
    1/2 tsp. fresh parsley, chopped
    6 cloves garlic, sliced
    2 c. water
    1 c. good dry red wine
    1/3 c. olive oil
Preparation
    Preheat oven for 15 minutes to 350\u00b0.
    Trim fat from leg of lamb; rub it with juice from half lemon, then with 3 tablespoons salt on all sides.
