Squash Croquettes - cooking recipe

Ingredients
    2 c. finely chopped yellow squash
    1 c. finely chopped onion
    1 c. finely chopped green pepper
    1 egg, beaten
    1 tsp. salt
    1 tsp. black pepper
    1/2 c. plus 1 Tbsp. all-purpose flour, unsifted
Preparation
    Combine first 5 ingredients; mix well.
    Stir in flour; drop by tablespoons into 1/2-inch hot oil.
    Cook until browned, turning once.
    Drain on paper towel.
    Yields 6 servings.
