Zucchini Relish - cooking recipe

Ingredients
    12 c. ground zucchini
    4 c. ground onion
    5 Tbsp. salt
    2 1/2 c. vinegar
    6 c. sugar
    1 Tbsp. dry mustard
    3/4 tsp. nutmeg
    3/4 tsp. turmeric
    3/4 tsp. cornstarch
    1 1/2 tsp. celery seed
    1/2 tsp. pepper
Preparation
    Mix zucchini, onion and salt and let set overnight.
    Rinse 2 or 3 times in cold water and let drain in colander.
    Mix in large pan sugar, spices, vinegar and cornstarch.
    Heat until mixture thickens.
    Add zucchini and onions.
    Cook 30 minutes and put in jars and seal.
