Pickled Mushrooms - cooking recipe

Ingredients
    3 lb. small fresh button mushrooms
    2 large cloves garlic, chopped
    2 onions, chopped very fine
    25 crushed peppercorns
    2 tsp. dried thyme
    3 lemons, juice and rind
    6 c. white wine
    2 c. cider vinegar
    4 bay leaves
    2 tsp. salt
    1/2 c. snipped parsley
    1 c. olive oil
Preparation
    Cover the mushrooms with water containing 3 tablespoons salt. Soak for
    10
    minutes; drain, then cover with the marinade containing
    all other ingredients.
    Heat to boiling, then turn down heat
    and
    simmer for 10 minutes.
    Discard the lemon rinds and chill.
