Carrot Cake #1 - cooking recipe
Ingredients

1 1/2 c. flour
1 1/4 c. sugar
1 1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1/4 tsp. salt
2 (4 1/2 oz.) jars strained baby carrots
2/3 c. oil
2 eggs, beaten
1/2 tsp. vanilla
2/3 c. coconut
1 can (8 oz.) crushed pineapple, drained
1/2 c. chopped walnuts
Preparation

Mix flour, sugar, soda, cinnamon and salt.
Add carrots, oil, eggs and vanilla.
Mix well.
Add pineapple, coconut and walnuts. Makes 9 inch square pan (for 9 x 13, double recipe).
Bake in preheated oven at 350\u00b0 for 40 to 45 minutes or until toothpick comes out clean.
Cool.
