French Market Soup - cooking recipe

Ingredients
    1 pkg. mixed dried beans
    ham, sausage or chicken or a combination of leftover meats
    2 onions, chopped
    2 green peppers, chopped
    3 to 4 stalks celery, chopped
    2 cans tomatoes, chopped with own juice
    garlic, minced to taste
    parsley
    bay leaf
    Tony's Creole seasoning
    Tabasco to taste
Preparation
    After soaking beans, add water and cook beans according to package directions for about 1 hour.
    Add rest of ingredients and bring to a boil.
    Cover and simmer for another 2 to 3 hours (or until beans are tender), stirring occasionally.
    Great alone or can serve over rice.
    Freezes well.
