Posh Squash - cooking recipe
Ingredients

2 lb. barely cooked squash, drained
2 eggs
1 c. mayonnaise
1 c. Parmesan cheese
1 medium onion, chopped
1/4 c. chopped green pepper
salt and pepper to taste
Preparation

Beat eggs and add mayonnaise.
Add other ingredients and mix. Place in greased casserole and bake at 350\u00b0 until bubbly.
Can be frozen and cooked in frozen state at 350\u00b0 for 30 minutes.
