Wilted Watercress And Tomatoes - cooking recipe

Ingredients
    vegetable cooking spray
    1 tsp. olive oil
    2 c. torn fresh watercress
    1 c. torn arugula
    2 medium tomatoes, seeded and coarsely chopped
    1 Tbsp. lemon juice
    1/4 tsp. pepper
Preparation
    Coat a nonstick skillet with cooking spray; add oil. Place over medium high heat until hot. Add watercress and arugula. Saute until wilted. Add tomatoes; cook until thoroughly heated. Sprinkle with lemon juice. Yields 4 servings (46 calories and 37% fat per serving).
