Ginger Pears - cooking recipe

Ingredients
    10 lb. pears
    8 lb. sugar
    4 oz. crystallized ginger
    6 lemons
Preparation
    Pare fruit; cut in thin slices after removing core.
    Mix pears and sugar.
    Place over low heat in large kettle.
    Stir until sugar is melted and syrup formed.
    Simmer until fruit is clear, stirring occasionally.
    Add grated rind of 2 lemons and juice of all 6. Add ginger, cut in small pieces; simmer until thick.
    Put in sterilized jelly glasses; cover with paraffin, or seal in sterilized pint jars while hot.
    Yields approximately 18 glasses.
