Place eggplant cubes on a plate and sprinkle with salt then let them sit for 30 minutes to remove bitterness. Rinse off the cubes in a collander then pat them dry with a paper towel.
Preheat oven to 425 degrees F.
Place eggplant cubes onto a nonstick baking sheet and drizzle the oil over them.

The chicken sits down over the Coke can, in a sheet cake pan. Cut the triangle from its rear, rub salt and white or black pepper onto the chicken skin.
Open the can Coke and remove the tab, place the chicken over the can Coke. Pout the chicken and Coke into a sheet cake pan and bake at 350\u00b0 for 45 minutes or until done.
If fryer is larger, it will take longer in the oven to bake, add about 15 to 30 minutes more.
Preheat oven to 375.
Place butter in 9x9\" glass pan and place in oven to melt as oven preheats.
Once butter is melted, place salmon steaks in dish.
