PRETZELS:
Combine warm water and

In a large mixing bowl, soften the yeast granules in the lukewarm water, adding the sugar and salt.
When yeast has begun to bubble and foam (3 or 4 minutes), mix in the beaten egg and flour.
Mix thoroughly to form a soft dough.
Do not allow dough to rise. Immediately divide into smaller pieces and knead.
Roll and twist into desired shapes.
Place on ungreased cookie sheets, using a pastry brush, cover pretzels with egg wash and sprinkle salt.
Bake for 15 minutes at 400\u00b0 or until browned.
Proof the yeast in the warm water.
Add the salt, margarine, egg and flour.
Chill 2 to 24 hours.
Divide the dough into half. Cut each half into 16 pieces.
Roll each piece 20-inches long. Knot into pretzel shape and place on greased pan.
Blend egg yolk and water to brush on pretzels.
Sprinkle on salt.
Rise the dough 1 hour.
Bake for 25 minutes at 400\u00b0.
SOFT PRETZELS:
Dissolve yeast in water,

Dip face of pretzel into melted butter.
Variation: add 1 t vanilla to the dough.

In a saucepan, melt the butter, garlic and essence.
Stir and mix until boiling.
Place the pretzels in a large bowl.
Drizzle the butter mixture over the pretzels and coat as best you can.
Spread the coated pretzels into an ungreased baking pan (can be split into two pans for easier tossing).
Bake at 250 degrees for 45 minutes (or until the pretzels are no longer wet), stirring every 15 minutes (to recoat the pretzels.) Cool and store in Ziploc or resealable container.
