Baked Cod With Roasted Red Pepper Horseradish Sauce

Preheat oven to 375 degrees F (190 degrees C).
Into a food processor, place the roasted red peppers*, horseradish sauce, and Worcestershire sauce. Pulse until smooth.
Pour 1/4 cup roasted red pepper sauce into a 13x9-inch baking dish, and spread to coat the bottom. Place fish in baking dish, and season with garlic pepper. Cover fish with remaining sauce. Sprinkle each fillet with crushed Cajun snack mix.
Bake in preheated oven until the crumbs start to brown, about 20 to 25 minutes.

Place packaged popcorn in the microwave; cook on high until popping begins to slow down, about 2 1/2 minutes. Mix in Parmesan cheese. Drizzle melted butter over popcorn. Mix in savory snack mix and salt.

Preheat oven to 250\u00b0.
In a small bowl, blend oleo and seasoning mix.
In a large roasting pan, mix remaining ingredients.
Pour oleo mixture over snacks; stir until well coated.
Bake 1 hour, stirring every 15 minutes.
Cool completely. Store in an airtight container.
Yields about 15 cups snack mix.

Fiesta Snack Mix

Preheat oven to 325\u00b0.
In a large bowl, combine corn chips and nuts.
In a small bowl, combine butter, cheese and taco seasoning mix.
Pour over corn chips mixture.
Stir until well coated. Spread mixture evenly on a baking sheet.
Bake 12 minutes.
Cool completely.
Store in an airtight container.
Yield:
About 6 cups snack mix.

Hollandaise Snack Mix

Preheat oven to 300\u00b0. In a small saucepan, melt butter over medium heat. Stir in next 3 ingredients. In a large bowl, mix together peanuts, crackers and pretzels. Pour butter mixture over peanut mixture. Toss until well coated.
Spread evenly on a baking sheet. Bake 15 to 20 minutes, stirring occasionally. Transfer to paper towels to cool completely. Store in airtight container. Yields about 6 cups snack mix.

Taco Snack Mix

In a large bowl, combine cereal, pretzels, tortilla chips and taco seasoning mix. Drizzle with margarine, tossing to coat well. Store in airtight container.

Fun Snack Mix

Mix all ingredients in a large bowl.
Store in airtight container.
Makes 10 1/2 cups snack.

Emily'S Chex Snack Mix

Melt butter in a small saucepan and add garlic powder, seasoned salt and worcestershire sauce. Just to warm heat only.
Using a large roasting pan with tall sides, pour in pretzels, cereals, crackers, cheerios and mix well.
Drizzle butter mixture over all. Using a large spoon mix well to coat.
Heat in a 250 degree oven for 45 minutes. Stir every 15 minutes. Let cool completely.
Add cashews and peanuts. Store in air tight container.

Zesty Snack Mix

In a large bowl, mix cereals, pretzels and snack crackers. Pour into large baking pan, 15 x 10 x 1, ungreased.
Mix remaining ingredients together and pour over cereal mix.
Toss to coat. Bake at 225\u00b0 for 2 to 2 1/2 hours, stirring every 30 minutes. Store in airtight containers.

Fiesta Snack Mix

.Preheat oven to 300 deg.
Combine corn chips, pretzels, pumpkin seeds, oyster crackers, peanuts, cheerios and pecans in a large roasting pan.
Combine margarine, worchestershire, sugar, garlic and hot sauce in saucepan.
Heat until margarine melts.
Pour over chips mixture and mix well.
Place in oven and back approximately 45 minute.
Stir frequently to cook evenly.

Cheerios Snack Mix

Put the Cheerios, peanuts and raisins in a large brown paper bag.
Bring the brown sugar, margarine, syrup and salt to a boil in a microwave dish; boil for 2 minutes.
Stir in the baking soda. Pour this mixture into the bag; shake and microwave for 1-1/2 minutes.
Shake again and microwave another 1-1/2 minutes.
Spread on a greased cookie sheet and stir as it cools.
Add M&M's when cool.
This makes about 3/4 of a 5 quart ice cream pail.

Snack Mix

In a a large bowl that is sprayed with Pam, combine Rice Chex, Wheat Chex, Cheerios, peanuts and pretzels.
Stir in melted white chocolate.
Stir well.
Then add M&M candy.
Spread on waxed paper to dry.
Break into pieces.
This can also be frozen. Enjoy!
