Simple Tomato & Avocado Crostini

Rub garlic clove on each slice of hot baguette. This will add a perfect light garlic essence without being \"in your face\" or oily. This technique is actually one of my favorites to use with crostinis or toasted sandwiches.
Mix together tomato, avocado, cilantro, lime juice, and olive oil. Season to taste with salt and pepper.
Scoop spoonfuls of the tomato/avocado mixture onto the garlic rubbed crostinis.
Serve and enjoy!

Sopa Sencilla - Simple Beef Broth

Peel and chop the onion, garlic, and tomatoes.
Put the bone, beef, garlic, onion, cumin, salt, pepper, tomatoes, and water in a large soup pot, bring to a boil, then simmer for 2 hours.
Drain the broth, reserving the beef and skimming away any fat.
Return the broth to the pot and heat to boiling. Add the rice and lower to medium heat. Simmer for 1/2 hour.
Shred the beef and return to the soup.
To serve, slice the avocado and lay the strips in the bottom of 4 soup bowls. Pour soup over avocado slices.

In large bowl, toss lettuce, tomatoes, chillies, and olives.
To serve, layer in the following order: 1/2 lettuce mixture, 1/2 dressing, 1/2 picante, 1/2 cheese, 1/2 chips.
Repeat the step above layering the remainder ingredients in the same order.
This is one of those recipes that can be changed up by adding other ingredients such as beans and using different types of cheeses.

Simple Salad With Halloumi

Combine salad greens, tomato, avocado, and cilantro on a plate. Drizzle with salad dressing.
Heat oil in a skillet over high heat. Add sliced halloumi and cook on each side until golden brown, about 90 seconds per side. Remove from pan, quickly chop, and sprinkle over salad. Serve immediately, while cheese is still hot.
