Heat olive oil in a pan and add almonds. Cook and stir until almonds start to brown slightly, 1 to 2 minutes. Add zucchini and toss with olive oil and almonds. Cook briefly until zucchini are tender, about 5 minutes. Season with salt and pepper.
Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish or line a baking sheet with parchment paper.
Combine zucchini slices and olive oil in a large bowl and toss to coat well.
Mix Parmesan cheese, bread crumbs, oregano, salt, and pepper in a second bowl or shallow dish. Dip oiled zucchini into bread crumb mixture and arrange close together on the baking sheet.
Bake in the preheated oven for 30 to 40 minutes, turning after 20 minutes so they brown evenly.

Place zucchini slices in a bowl; sprinkle salt on top. Let stand for 10 minutes. Drain off excess moisture.

Add zucchini stirring frequently to lightly saute for 2 minutes.
Add 1 tablespoon butter and then sprinkle dill weed. Stir the dill evenly throughout.
Remove from heat and serve. Enjoy!

The key to this dish is cooking with high heat, don't add too much zucchini at once or it will steam and mush. Use 2 pans dividing the ingredients to keep the heat even.
