Shape into a loaf.
Line loaf pan with two slices of white bread.

Bread will soak up the extra grease. Make sure to discard it when cooking is done.
For sauce.
Heat soup and milk over med. heat.
Add cheese.
Add chopped onion and parsley if desired.
Pour over meatloaf or pass around the table.

Spray a large, heavy skillet with cooking spray and set over medium-high heat. Add meatloaf slices in the skillet. Fry until browned, 2 to 3 minutes per side. Set slices aside.
Reduce heat to medium-low. Return meatloaf slices to the skillet. Pour mushroom soup on top. Cover and cook until soup becomes bubbly, about 5 minutes.
Mix all ingredients together with your hands in a large bowl.
Form into 2 small flattened loaves on a pan that allows extra room for grease to drain off.
Bake approximately 45 minutes to 1 hour at 350\u00b0F.
(Baking times may vary depending on the size of your loaves.).
Optional add 1/2 to 3/4 cup of shredded cheese to mixture. (My sister folds a slice of cheese inside of her meatloaf).
