Date Filling:

Mix dough ingredients and set aside for a few minutes.
Roll out, cut with round cookie cutter.
Place 1/2 to 3/4 teaspoon of the date filling on it.
Cut a tiny slit on top of the top cookie and place it over the filling.
Press the edges of the two cookies together with your fingers.
Scrape the excess back into the cookie.
Combine dates, 1 cup water, sugar and lemon juice.
Cook until thick, then cool.
While date mixture cools, make cookie dough.

Add sifted ingredients and beat well.
Form into small loaf 1 1/2-inch in diameter.

Slice and arrange half slices on greased cookie sheet.
Place 1 teaspoon date filling and top with another slice. Bake at 350\u00b0 for 10 to 20 minutes.
