Easy Cinnamon Fudge

Line an 8x8 inch baking pan with aluminum foil, allowing foil to hang over the edges. Grease the foil.
In a medium bowl combine confectioners' sugar, cocoa and cinnamon.
Heat butter and milk in a medium saucepan over medium heat. When butter is melted stir in vanilla. Remove from heat and stir in sugar mixture and walnuts.
Pour into prepared pan. Refrigerate for 1 hour, or until firm.
Lift foil out of pan. Cut fudge into 2 inch squares, and then cut in half diagonally to make triangles.

Line 8-inch square baking pan with foil, allowing foil to extend over sides. Butter foil. In bowl, mix sugar, cocoa and cinnamon. In saucepan, heat butter and cream until butter melts (do not boil). Add vanilla. Combine with sugar mixture. Stir in nuts. Pour into prepared pan. Refrigerate at least 1 hour. Use foil to lift out of pan. Cut into 2-inch squares. Diagonally cut each square in half, making triangles. Garnish with whole nuts, if desired.

Line an 8\" Square pan with foil, letting ends hang over sides.
In heavy 3 quart saucepan combine sugar, butter and milk.
Bring to a rolling boil over medium heat, stirring constantly.
Boil for approximately 5 minutes or until mixture reaches 234 degrees on a candy thermometer.
Remove from heat and stir in cinnamon chips until melted.
Add marshmallow creme and vanilla and stir until completely blended.
Pour mixture into foil lined pan and let cool to room temperature.
Gently lift foil out of pan and cut into squares.

Pourable Fudge Icing

I had to make a double batch of fudge icing to get the right thickness of icing for this cake. The icing recipe I used was a combination of 2 different recipes.
In saucepan combine all ingredients. Bring to a boil, and cook for 1 minute Remove from heat. Whisk with an electric mixer, for 2.5 - 3 minutes, or until it thickens enough. Pour over cooled or warm cake. Doubled this for a 9x13.

Combine oats and flax meal. Add water and stir to combine, using less water for thicker oatmeal and more water for thinner oatmeal.
Microwave on high for 1 minute.

Mix flour, soda, cinnamon, and oats and add slowly to creamed mixture.
Spread 2/3 of this into 9x13 pan (it will be a bit thin).
For fudge filling, melt remaining ingredients in a saucepan and pour over dough in pan.
Shape the remaining dough into circles and press them into the fudge.
Bake at 350\u00b0 for 25 minutes, or until topping is lightly browned.
Let cool quite a bit before cutting into bars, as it will result in a delicious gooey mess!
