Pressure Cooker: After quick soaking beans, drain and rinse. Add fresh water, the ham bone and seasonings. Cover and heat equivalent to 15 lbs PSI; time for 7 minutes, plus 1 minute per 1000 ft above sea level. Remove from heat, to allow pressure reduce normally.
Soup Ingredients: Uncover, add the remaining soup ingredients (except pasta); simmer 45 minutes. Stir in pasta and simmer 15 more minutes, or until tender.

Place the ham bone into a large pot and fill with enough water to cover. Bring to a boil and cook for 15 minutes. Add the onion and tomatoes, then stir in the frozen mixed vegetables and potatoes. Simmer for about 20 minutes, then add the macaroni, rice, and chopped ham. Cover and simmer over medium-low heat for 1 1/2 hours. Any ham on the bone should come off easily. Place ham bone in a medium stock pot. Fill water to just cover ham bone.
Bring water to a boil and add carrots, celery, potato, onion, pepper, and bay leaves.

10 minutes before serving, bring back to a boil and add egg noodles.
5 minutes before serving, add peas.

The Best Split Pea Soup

Heat peas and water to boiling; boil gently 2 minutes.
Remove from heat.
Cover and let stand 1 hour.
Add ingredients.
Heat to boiling.
Reduce heat and simmer 2 1/2 to 3 hours or until peas are very soft.
Remove bone; trim meat from bone and add to soup.
If desired thin with milk or water; season to taste.
Makes 6 cups. You can substitute 1 pound ham shank or ham hocks for ham bone.
