Put whole chicken in 3 1/2 quart water in large Dutch oven. Put bay leaf, ham bone, chicken cubes, onion and parsley.

Best Ever Fresh Onion Dip

Stir cream cheese and sour cream in a medium bowl until blended.
Heat oil in a medium skillet.
Add onion, salt and pepper and cook, stirring occasionally, 8 minutes or until onion is soft, but not browned.
Let cool completely.
Stir into cream cheese mixture along with sliced green onion.
Cover and refrigerate at least 30 minutes for flavors to blend.
It's best if chilled over night.

Cook pasta according to directions.
Rinse in cold water.
Combine pasta, artichoke hearts, olives, onions, and the cheeses, dressing, and rest of veggies, ham and salami; toss and mix well.
Taste to adjust seasoning, vinegar, or EVOO.
Cover and chill pasta salad for at least 2 hours or overnight is best.

Best Ever Mashed Sweet Potatoes

Place potatos into pot of boiling water. Let boil for about 30 minutes or until potatos call off of fork when poked.
As potots are finishing 1 combine butter, cream, sugar, cinnamon, nutmeg, vanilla and salt into saucepan. Cook on low-medium heat until ingrediencts melt well together (about 5-7 min).
Pour finihsed potatos into colander.
Take sauce off of heat and mash hot sweet potatos in saucepan with potato masher.
Serve Immediatley.

Best to let it sit in the fridge for a few hours to allow the flavors to fully blend together but can be served as soon as it's made if desired.
serve cold either on tostada shells, as a dip with chips, or in a dish to eat alone.
May be garnished with lettuce, avacado, and black olive if desired.
