Melt butter in a Dutch oven saute onions till tender 5 minutes.
Add sugar, caraway seeds, and pepper stir in and place brats on top, cover the brats with beer drink the remaining. Bring to a boil and reduce to simmer until brats are cooked. Remove brats and add kraut and stir.
Place brats on medium high grill and cook brats until golden brown and return to beer/kraut mixture until ready to serve. Serve brats on fresh baked brat buns with sauerkraut & onions, fresh grated horseradish, ketchup, and/or mustard.

Season chops w/ seasoning salt and brown chops in butter-get them golden brown. Do not worry about them being undercooked.
Brown brats-you can brown them with chops if you are a multi-task person.
Using a large skillet with a lid, place bacon slices in bottom, top with 1/2 of sauerkraut and 1 Tbs. caraway seed.
Put the brats around the outside edge of pan and chops in the middle. Top with sliced onion.
Top with remaining kraut and caraway seed.
Pour beer over all and cover.
Simmer for one hour.

Rinse sauerkraut with warm water in colander, drain well. Place in heavy saucepan or pot with the butter and seasonings (salt, pepper, caraway seed, juniper berries, onion, apple, whatever you like).
Cover pan tightly, simmer over lowest heat 15 to 30 minutes.
Add liquid (omit salt if bouillon is the liquid). Cook 30 minutes to 1 1/2 hours longer, according to your taste. Makes 6 servings.
