Bring a pot with enough water to cover the shrimp to a boil. Add the shrimp and cook only until pink (about 5 minutes).
Drain, rinse with cold water, peel, shell and remove any black vein, then chill in the refrigerator.

To Make the Papaya-Citrus Salsa: In a medium
In a food processor, whir together the papaya seeds and onion until finely chopped.
Add the vinegar, sugar, salt, and mustard and pulse 3 or 4 times.
With the processor running, gradually add the oil in a thin stream until dressing emulsifies.
Use on your favorite salad greens.
Good with a bit of crumbled feta added, too!

Dissolve the sugar in the vinegar by simmering briefly.
Mix the ginger with the papaya and pack in clean canning jars.
Pour vinegar solution over it.

Add a few drops of food coloring.
Cool.
Shape into balls and roll the balls in granulated sugar.
Wash and dry lettuc, tear into bite sized pieces place in a salad bowl or platter.
