Chili - cooking recipe
Ingredients

2 tbs vegetable oil
2c. chopped onion
1c chopped bell pepper
2lb cubed beef
.75lb dried beans (mix kidney, navy, etc.)
1 can (28 oz) tomato puree
2 can diced tomatoes - with juice
Spice Mix (see above)
Preparation

Soak beans overnight (12 hours minimum) in 1 gal water with 2 tsp cumin.
dredge beef in 1/2 c. flour, 1tsp salt, 1 tsp parsley, 1 tsp chili powder, 1 tsp cayenne.
In Dutch oven, toss beef in hot oil, coat, add peppers and onion.
When 1/2 beef is browned, add all tomato products. Stir to mix and coat.
Add beans (rinse before adding).
Cook 1 hour on low heat.
Add 2 Anaheim peppers sliced thinly, seeds removed.
Add spice mix and 10oz beer.
Cook on low for 5-6 hours, stirring occasionally.
