Quick Sweet & Sour Meatballs - cooking recipe

Ingredients
    1/2 of 38oz. pkg. of Mama Lucia's cocktail size meatballs
    3 sweet peppers (1 each of green, yellow, orange looks great!) chopped in 1\" chunks
    1 sweet onion, choppped in 1\" chunks
    SAUCE:
    1/2 cup sugar
    1/2 cup brown sugar
    1 can pineapple chunks WITH juice (no sugar added)
    3/4 cup water
    3/4 cup apple cider vinegar
    1/2 tsp. salt
    3 tbls. cornstarch, dissolved in the water
Preparation
    Saute onion in olive oil until lightly browned. Remove from heat and add chopped peppers. Set aside.
    Drain pineapple, reserving juice.
    Combine pineapple juice, sugars, vinegar, and salt in a large saucepan.
    Dissolve cornstarch in the water and stir into pan.
    Heat over med-high heat, stirring constantly until mixture is clear.
    Add meatballs, peppers, onion, and pineapple chunks. Simmer for 30 minutes.

    Serve with rice.
