Western Quicks - cooking recipe
Ingredients

4 eggs + 2 egg whites, beaten
6 small red potatoes, sliced thinly (leave skin on)
3 slices lean deli ham
1 small onion, diced
1/4 green pepper, diced
1 tsp red pepper flakes
2 TBL olive oil
salt & pepper
Preparation

In a large skillet, heat oil. Saute diced onion, green pepper & sliced potatoes over medium heat till tender but firm. Tear deli ham into small pieces & stir into skillet mixture. In a bowl, beat eggs, salt, pepper & red pepper flakes. Add to skillet mix & lower heat slightly. Gently fold mixture as eggs cook. Do not overcook eggs. Serve with toast or English Muffins & jelly.
