Slow Cooker Pork Chops & Potatoes - cooking recipe

Ingredients
    4 to 6 thick (3/4- to 1-inch), boneless pork chops
    1/2 cup flour
    2 tablespoons vegetable oil
    4 tablespoons butter
    2 cups milk
    3 large baking potatoes, thinly sliced
    1 medium onion, thinly sliced
    salt and pepper
Preparation
    Heat 1 tablespoon of oil in large skillet on medium heat. Saute sliced onion sprinkled with salt and pepper until soft. While onion is cooking, dredge pork chops in 1/4 cup flour seasoned with salt and pepper. Remove onions from pan, add a tablespoon of oil to pan, and add pork chops to lightly brown (about 4 minutes on each side). Remove browned pork chops from pan.

    Melt 4 tablespoons butter in the pan, and loosen browned bits with a wooden spoon. Once butter is melted, add 4 tablespoons of flour, 1/4 teaspoon of salt, and 1/8 teaspoon of pepper. Stir until smooth and bubbly. Remove from heat and add 2 cups of milk. Put back on medium high heat and stir continuously until sauce starts to thicken. Boil for one minute and remove from heat.

    In crockpot, add a layer of potatoes, sprinkle salt and pepper, a layer of sauteed onion, and 1/2 cup of sauce. Continue with these layers and end with browned pork chops on top. Pour remaining white sauce on top of pork chops.

    Place crock pot on high for one hour and then reduce to low for 4-5 hours.
